It is not even two weeks ago the landscape was covered in snow here in the dark north. Today the sun came and the temperature said 24 degrees when I got off work. Oh. yeah. So before Stefan went off to night practice in Copenhagen we went outside in our tiny little garden, made the table and chairs ready and ate dinner outside. Since it was such warm weather, we went for something easy peasy and light. Tuna and egg salad. As simple as that! What was in it you ask? Tricolore salad, avocado, tomatoes, cucumber, tuna, eggs, sesame seeds, flax seeds, apple cider vinegar, olive oil and feta cheese. Yum!
Hello hello hellooo Yesterday I wanted an easy but delicious lunch on my day off. It ended up with this panini made of rye bread.. Because you know.. carbs! In the panini I used some havarti cheese, tomato and my favourite..: the avocado. It was delicious! And easy! 🙂
